a combination of sizzling beef and onion and colourful capsicum makes for a mouth-watering, multi-coloured delight. serve fajitas with a salsa and freshly chopped chillis for an extra kick. for a variation, fajitas work just as well using chicken or pork.

Ingredients:

350g lean beef strips
6 large corn tortillas
1 red capsicum, deseeded and cut into strips
1 yellow capsicum, deseeded and cut into strips
1 green capsicum, deseeded and cut into strips
2 garlic cloves, finely chopped
1 tbsp ground cumin
1 red onion, thinly sliced
1 cup cherry tomatoes, chopped
1/2 cup coriander leaves, chopped

Step 1: heat a frypan to medium-high heat and spray with canola oil. add beef, garlic and cumin. stir fry for 3-4 minutes until meat browns. transfer to a plate, cover and keep warm.

Step 2: add capsicum and onion to the pan stir fry for 2 minutes until crisp. return beef to the plan and toss together

Step 3: warm tortillas in oven or microwave.

Step 4: spoon 2-3 spoonfuls of beef mixture into the tortilla, add tomatoes and coriander leaves.
