All it takes to create this amazing beef ragout is a budget cut of beef, simple pantry incredients and a little patience. The end result is truly delicious!

The beauty of slow-cooked meals is they require minimal prep and once the ingredients are in the pot, you can just leave it to simmer away and get on with your day.
Ingredients:
700g diced beef/chuck steak
4 garlic cloves, crushed
2 brown onions, chopped
3 celery stalks, sliced
3 carrots, sliced or diced
4 button squashes, ends removed & chopped
2 x 400g cans diced tomatoes
150ml beef stock
1 tsp ground paprika
1 tsp dried thyme
1 tsp dried oregano
1 x 400g can cannellini beans, drained & rinsed
rock salt & cracked pepper to season
Step 1 – Place meat into a slow cooker and add the garlic and chopped vegetables.
Step 2 – Mix together canned tomatoes, stock, herbs and beans, then pour over meat and vegetables. Season with salt & pepper.
Step 3 – Cover and cook on low for 8-10 hours.
Tip:
• Garnish with chopped parsley leaves.
