Here is the recipe for an authentic, full-flavour Chili Con Carne you can prepare in ten minutes. It’s packed full of nutritional ingredients such as red kidney beans and tomatoes.

Ingredients:
500g lean beef mince
1 brown onion, chopped
2 tbsp red chillies, finely chopped
1/2 pkt taco seasoning
400g can diced tomatoes
400g can red kidney beans
1/2 cup corn kernels
1/3 cup fresh coriander leaves, chopped
325ml taco sauce
canola cooking spray
cracked pepper (to season)
Step 1 – Heat frying pan and spray with oil. Add mince, onion, chillies and sprinkle with 2 tbsp of the taco seasoning. Cook until meat has browned.
Step 2 – Add the tomatoes, red kidney beans, corn and coriander.
Step 3 – Pour taco sauce over chilli mixture and stir in the rest of the taco seasoning. Cover and cook and medium heat for 5 minutes, stirring frequently. Add cracked pepper to taste.
Serve immediately with a salad.
Tip: This recipe freezes well so why not ‘double up’ so you have some for another day.
