the fruits of choice for this dish are inspired by the traditional festive colours Christmas – delicious red strawberries and kiwi fruit. normally fruit parfaits are made with granola, but I have elimated the high-energy carbs, so we can enjoy this throughout the festive season, anytime of the day.

Ingredients:

500g strawberries, sliced
4 kiwi fruit, diced
800g low-fat vanilla yogurt
2 tbsp natural sweetener
1/4 tsp vanilla essence
2 tbsp lemon zest
2 tbsp flaxseed meal
mint leaves (garnish)
honey or maple syrup (optional)

Step 1: In a mixing bowl, combine stevia, essence and yogurt. Whisk lightly to blend.

Step 2: Start by layering a parfait glass, bowl, or small glass with a couple of tablespoons of yogurt in each. Continue layering with strawberries, followed by yogurt, then some chopped kiwi fruit. Repeat the process until glasses are full.

Step 3: Garnish with mint leaves, top with strawberry halves and some lemon rind, sprinkle with flaxseed meal.

Tips:
• if you like a little more sweetness, add some honey or maple syrup over the yogurt.
• you can substitute the fruit for mixed berries, diced mango, peaches, nectarines – whatever fruit is in season.
• for additional protein, you can mix a tbsp of whey isolate protein powder into the yogurt.
