Ingredients:

400g can kidney beans, drained
400g can chickpeas, drained
400g can cannellini beans, drained
270g corn kernels, drained
½ continental cucumber, diced
½ cup (50g) kalamata olives, sliced
2 medium carrots, diced or grated
½ cup fresh coriander, chopped
3 celery stalks, chopped
100g low-fat feta cheese, cubed
1 red capsicum, chopped
1 red onion, finely chopped

Step 1 – Drain beans, chickpeas and corn, wash thoroughly and put in a large salad bowl.

Step 2 – Add rest of the ingredients and mix well.
