chicken soft shell tacos with avocado is on the menu. these tacos are SUPER EASY to make and are a real family fan. whenever i make these tacos they disappear from the plate faster than Speedy Gonzales!

Ingredients:
400g cooked chicken breast, shredded or diced
1/4 cup fat-free mayonnaise
1 avocado
2 cups iceberg lettuce, shredded
1 red onion, thinly sliced
2 tomatoes, diced
1/2 cup continental cucumber, diced
70g low-fat cheese, grated
10 corn tortillas
lime wedges to serve
Step 1: Spoon out flesh of the avacodo and combine with mayonnaise in a bowl
Step 2: Warm tacos as per pack instructions
Step 3: Assemble the tacos – spoon some avocado mayonnaise mix onto the tortilla, top with chicken, lettuce, tomato, cucumber, onion and cheese.
Tip:
• For added convenience you can use pre-booked BBQ chicken.
