This recipe has been inspired by a Maldavian dish known as ‘Mas Huni’.  A typical breakfast served in the Maldives, Mas Huni includes tuna, onion, coconut and chilli. It’s such a simple dish to make and so delicious!

Ingredients:

6 x 125g smoked tuna slices, drained
3 spring onions, finely sliced
1/2 red onion, chopped
6 celery stalks, finely chopped
1/2 cup coriander leaves, chopped
1 red chilli, deseeded and finely chopped
3 tbsp coconut flakes
1 mango, diced
1/2 red papaya, seeded & diced
1 head of lettuce of your choice (cos, iceberg, butter)
flaxseed oil

Dressing:
1 tsp lime zest
1 lime, freshly squeezed
60mls coconut milk
1 tsp fresh ginger, grated
1 tsp coconut sugar

Step 1 – Place tuna into a large bowl and use fork to flake the tuna and break up any chunky pieces.

Step 2 – Stir through onions, celery, coriander and chilli then add mango, papaya and coconut. Combine.

Step 3 – Place all dressing ingredients into a screw top jar and shake until thoroughly combined. Alternatively whisk all ingredients together.

Step 4 – Arrange lettuce leaves on a large platter and spoon the tuna mix over the leaves. Pour dressing over the salad just before serving, or serve on the side.

Tips:
• For a post-workout meal, add your preferred high-energy carbs such as rye bread, a corn tortilla, rice or pasta.
• If you can’t find or do not like smoked tuna, substitute with canned tuna in spring water.
• If you don’t like chilli, substitute for red capsicum.
