light, creamy and decadent! mocha praline mousse is a healthy, low-cal treat that chocolate and coffee lovers will enjoy.

Ingredients:

300g ricotta cheese (dairy free tips below)
400g yogurt
2 tbsp light milk
1/2 tsp chocolate essence
1 tsp cocoa powder
1 scoop (30g) protein powder, chocolate
1 tbsp black chia seeds
1 tbsp chocolate (for garnish)

Mocha Syrup

1 tbsp maple syrup
1 tsp cocoa powder
3 tbsp cold water
1/2 tsp instant coffee
1/2 tsp vanilla essence

Step 1: In a small saucepan, combine all syrup ingredients and bring to the boil. Stir frequently. Remove from heat and pour into a small jug. Refrigerate until ready to use.

Step 2: In a blender combine ricotta cheese, yogurt, milk, chia seeds, chocolate essence, protein powder and cocoa powder. Process until smooth.

Step 3: Spoon mousse into small serving jars/glasses or bowls. Top with mocha syrup and a little grated chocolate.

Tip:
• for dairy free options substitute the ricotta cheese for almonds/cashews/tofu and use plant based yogurt and milk (soy, almond, coconut)
