this popular bistro meal has been recreated for you to enjoy at home. steak marinades make steaks more tender and inject flavour into them. you can transform any cheaper cut of beef or lamb into something that tastes as good as a premium cut.

Ingredients:
800g lean sirloin steak (or your preferred cut)
coconut cooking spray
Steak marinade:
1 tsp dijon mustard
1 garlic clove, minced
1 tbsp tamari sauce (or soy sauce)
1/2 lime, squeezed
1 tbsp balsamic vinegar
cracked pepper
2 spring onions, finely sliced
Step 1: In a small cup whisk together all the marinade ingredients.
Step 2: Place steaks into a large plastic zip-lock bag and cover with the marinade. Remove air and seal. Squeeze bag to coat meat with marinade. Refrigerate for 1-2 hours before cooking.
Step 3: Pre-heat grilling plan or barbecue on high heat. Spray with oil, add steak and cook to desired taste – about 3-4 mins per side for medium-rare. When cooked to your liking, remove from the heat and rest for 3-4 mins before slicing.
Tip:
• The steak is even better if left to marinade overnight.
• Resting the meat allows the proteins to slow their action and re-absorb some of the moisture in the meat.
