A delicious way to enjoy the goodness of tuna, plus a fun way to get kids eating more vegetables! Raw vegetables and sprouts that crunch work best. Add any type of protein source such as chicken, pork, prawns or even crab meat.

Ingredients:

2 x 425g cans tuna in springwater, drained
1 cup bean shoots
2 carrots, cut into matchsticks
1 cucumber, cut into thin strips
1 red capsicum, cut into thin strips
2 tbsp unsalted peanuts, chopped
fresh coriander leaves, chopped
cracked pepper
12 round rice paper sheets

Dressing:
1/2 lime, freshly squeezed
2 tbsp sweet chilli sauce
1 tsp brown sugar

Step 1 – Place cut vegetables on a large plate or chopping board. Mix together dressing ingredients and brush over vegtables.

Step 2 – Drain tuna and mix well with peanuts and coriander, season with cracked pepper.

Step 3 – Soak one sheet of rice paper at a time in a dish of warm water until soft (approx 20 secs). Remove from water and place on a damp tea towel.

Step 4 – Place a portion of the tuna and vegetables onto the top of the rice paper sheet. Fold the top over, then both of the sides and roll up. Repeat process.

Tips:
• Serve with sweet chilli sauce or soy sauce.
