Ingredients:
250g spaghetti
2 garlic cloves, minced
1 red capsicum, deseeded and sliced
1 yellow capsicum, deseeded and sliced
2 x 425g cans tuna in springwater, drained
400g tomato passata or cushed tomatoes
50g pitted black olives, sliced
1 tsp brown sugar
1/2 tsp chilli flakes
rock salt & cracked pepper
Step 1: cook spaghetti until it is ‘al dente’.
Step 2: spray a large frying pan with oil, add garlic and capsicums. cook, stirring, for 1-2 minutes to soften.
Step 3: add tuna, passata, olives, sugar and chilli. season with salt & pepper. bring to a simmer and reduce the heat. cook for 6-7 minutes stirring occasionally.
Step 4: transfer the cooked spaghetti into a large serving dish and spoon the tuna mixture over the top. toss lightly to coat the pasta with sauce.
