Ingredients:
425g tuna in springwater, drained
1/2 red capsicum, deseeded & diced
1/2 red onion, chopped
1/2 cup fresh parsley, chopped
1/2 cup corn kernels, drained
2 tbsp low-fat mayonnaise
cracked pepper
Step 1: Drain the tuna well and place in a mixing bowl.
Step 2: Add chopped capsicum, onion, parsley and combine.
Step 3: Add corn, pepper and mayonnaise and mix all ingredients together well, making sure the mayonnaise is dispersed evenly throughout the mix.
Tip:
• tuna supreme can be enjoyed as a meal on its own. alternatively, add your preferred high-energy carb, like tortilla wraps or rice cakes.
